Video recipe: Golden mac & cheese pasta
- 250 gm organic whole wheat pasta, cooked as per packet instructions
- 1 cup pumpkin, unpeeled, cubed, steamed
- ½ cup-soaked cashews
- 5 cloves garlic
- ½ medium-sized onions, finely chopped
- 1 tsp lemon juice
- ½ tsp mustard powder
- 1 tsp mixed herbs
- Sea salt to taste
- Blend steamed pumpkin, garlic, onions with cashews, mustard powder, lemon juice, turmeric, salt into a thick sauce.
- Strain the pasta, reserve little pasta water at the side. Add pasta sauce and mix well.
- Sprinkle with mixed herbs and serve
- You can drizzle tomato-based sauce on the top for added effect.
